Southern Style Catfish
2 Catfish
Fillets (slice into smaller planks as shown above)
1 Cup soy grits
4 tbsp French Fry Seasoning (I sue Encore brand
available @ Big Lots / Fred's / Dollar General)
2 eggs
If you
have a cast iron skillet, use if for this recipe! If not
a non stick pan will do the trick too. Fill the pan with
canola oil about half way full. Heat until oil is hot
and ready for frying.
Beat eggs
in a small bowl and add 1 tbps of seasoning. Add the remaining
seasoning to the soy grits and mix well.
Dredge
the planks of catfish in the egg and then the soy mixture, shake off
loose mixture and place in hot oil. only put a few in
at a time, don't over fill the pan or your fish will come out soggy
and not crisp on the outside.
Do not
turn until you see the color getting a medium brown, cook a few minutes
longer on the second side after turning. Drain catfish on paper
towel before serving. Enjoy!

Combine
and chill one hour before serving.
