Chicken
Salad Log

1 package
cream cheese softened
1/4 cup mayonnaise
2 tbsp lemon juice
1/2 tsp salt
1/8 tsp ground ginger
1/8 tsp pepper
1 tsp Louisiana hot sauce
2 cups finely chopped chicken
2 hard boiled eggs chopped
1/4 cup sliced green onions
3 green pepper rings
Topping:
1 tbsp toasted sesame seeds
3 tbsp chopped green onions or green peppers
3 tbsp chopped black olives
3 tbsp chopped pimento drained
Mix cream
cheese, mayonnaise, lemon juice, salt, ginger, pepper and pepper sauce.
Stir in chicken, eggs and 1/4 cup green onions. Shape
into log 8 X 2 inches, wrap and refrigerate until firm, about 4 hours.
Cup green
pepper rings to make strips. Place diagonally across log, dividing
log into 4 sections. Sprinkle sesame seeds on one section.
Sprinkle other sections each with one of the other toppings.
This makes
a really big log and it's great on holidays served with Wasa crackers,
cheese chips, or pork rinds!
